Arroz Con Pollo (Chicken with Rice)

You will need:

5 quart Lifetime® Cookware Liquid Core® unit with cover
Whole small chicken (2 1/2 -3 Lb), cut up (with or without skin)
Adobo or Ya-YaB® seasoning
2 packets Sazon Goya® or 2-3 teaspoons tomato paste
2 1/2 cups long grain rice
2 cups water
1/2 small onion, chopped
Salt, to taste
Green peas, optional, to taste
Green olives, sliced, optional, to taste

  • Preheat 5 quart pan to 400 degrees.
  • Season the chicken as desired and add to preheated pan. Brown on all sides
    for 10-15 min.
  • Add the chopped onion, water, Sazon or tomato paste, salt to taste, and
    bring to a boil.
  • When water comes to a boil, add rice. Cook without the cover until water
    is mostly evaporated.
  • Cover and reduce temperature to simmer for about 20 min.
  • Add peas and olives (if desired), mix, and serve when heated through.
  • Great with waterless Lifetime® Cookware waterless carrots on the side.
