Egg
and Bacon Muffins
You
will need:
11" stove
top or electric casserole with cover
Utility rack with 6 cups
Cooking spray
6 eggs
6 slices Canadian bacon to fit cups
Shredded cheese
6 English muffins, toasted (or toast)
- Pour 1/2" water into
bottom of pan and bring to a boil. Set rack inside pan.
- Spray cups with cooking spray
and place inside rack.
- Crack eggs into cups, and
sprinkle with cheese.
- Lay a piece of Canadian bacon
over the top of each.
- Cover and cook for 10 minutes.
- Remove cups and flip cooked
egg mixture onto toasted English muffins.
