Rican Flan Custard
You
will need:
11" Lifetime®
Cookware oil core skillet with dome cover
Utility rack
Double boiler insert
1 quart vegetable unit
1/2 cup sugar (for caramel)
12-oz. can evaporated milk
12-oz. can sweetened condensed milk
1t vanilla
6 eggs
- Prepare 11" skillet by filling
it halfway to the top with water. Place the utility rack
on the lip of the skillet. Preheat to 375 degrees.
- Make caramel in the 1 quart unit
by melting the sugar at medium heat. Stir until
the sugar turns light brown. Pour the melted sugar into
the double boiler insert.
- Mix the milk with the vanilla. Mix
eggs briefly and add to the milk mixture. Slowly
add milk mixture to the double boiler (to about 1"
height).
- Put the double boiler insert on
top of the rack in the electric skillet. Cover with dome
cover and cook until the cover is hot; reduce the heat and
cook for about 15 minutes.
- When a toothpick inserted into the
center of the flan comes out clean, it is done
cooking. Invert onto a plate and serve. Delicious!
