Fried
Rice with Shrimp and Ham
You
will need:
Lifetime® Liquid
Core® Electric Skillet
2 eggs
Cooking spray, such as Pam®
1/2 cup cooked medium shrimp, cut into 1/2" pieces
2t dry white wine
1t cornstarch
1/2 cup diced ham
2T sliced green onion
2T diced carrot
2T frozen peas, thawed
3 cups cooked long grain rice (about 1 cup uncooked)
1T soy sauce
Pepper, to taste
Additional soy sauce, to taste
- Spray a light coat of cooking spray
in skillet and preheat to 350 degrees.
- Whisk eggs until blended and pour
into skillet. Using a spatula, lift eggs as
they cook, letting uncooked part run underneath until set.
- Transfer eggs to a cutting board
and cut into shreds.
- Combine shrimp, wine, and cornstarch
in a small bowl.
- Add shrimp to skillet and stir-fry
until just pink, about three minutes.
- Add ham and vegetables and stir
fry one minute.
- Add shredded egg, rice, and 1T soy
sauce and combine until heated through.
Season with pepper and serve with extra soy sauce on the
side.
