Greek Chicken and Potatoes

You will need:

Lifetime® Cookware 5 quart oil core casserole with cover
1 3.5 Lb chicken, cut into pieces and skinned if desired
6 russet potatoes (about 3 1/4 Lb), quartered lengthwise
4 large garlic cloves, halved
3/4 cup canned low-salt chicken broth
1T olive oil
2/3 cup fresh lemon juice
2t dried oregano, crumbled (or 2T fresh chopped)
YaYa-B® or other Greek style seasoning

  • Preheat casserole to 400 degrees. Season chicken with YaYa-B® or other
    seasoning and brown chicken on all sides.
  • Add garlic cloves and broth to the pan, and place potato slices on top.
  • Whisk together olive oil, lemon juice, and oregano to combine, and pour evenly
    over chicken and potatoes.
  • When steam escapes from the pan, reduce heat to simmer and cook for 30 minutes. 
  • Serve.
