Lorri's Lacy Latkes

You will need:

12" Liquid Core® Electric Skillet
12" Grater rack
2 Qt. ricer
4 potatoes, peeled
1 small onion
2 jumbo eggs
1/3 cup flour
1 t baking powder
1 t salt
Pepper, parsley, sage, rosemary and/or thyme (or desired seasonings)
Cooking spray

  • Grate potatoes by using the largest holes on the 12" grater.
  • Place potatoes in the 2 Qt. ricer and rinse under cold water to remove the starch.
    Be sure to allow the potatoes to drain well.
  • Grate onion, removing any excess moisture by placing in the ricer and pressing
    with the back of a spoon. Combine potato and onion.
  • Beat eggs into mixture; stir in flour, baking powder, salt, pepper, and spices as desired. 
  • Preheat 12" Liquid Core Electric Skillet to 350 degrees. Spray with cooking spray.
  • For each pancake, drop about 2 Tablespoons of batter into the skillet and flatten
    with the back of a spatula. The flatter the pancake, the crispier it will be. Brown
    well on both sides for about 5 minutes per side.
