Low-Fat Flan

You will need:

11" Lifetime® oil core skillet with dome cover
Utility rack
Double boiler insert
1 quart vegetable unit
1/2 cup sugar (for caramel)
2 12-oz. cans evaporated skim milk
1t vanilla
1 1/2 cups egg substitute
1/4 cup sugar

  • Prepare 11" skillet by filling it halfway to the top with water. Place the utility rack
    on the lip of the skillet. Preheat to 375 degrees.
  • Make caramel in the 1 quart unit by melting the sugar at medium heat. Stir until
    the sugar turns light brown. Pour the melted sugar into the double boiler insert.
  • Mix the evaporated skim milk, vanilla, egg substitute and remaining 1/4 cup sugar.
    Pour this mixture on top of the caramel in the double boiler insert.
  • Place the double boiler insert on top of the utility rack and cover the 11" skillet
    with the dome cover. When a puff of vapor escapes, turn the heat to low and
    steam for 25 minutes or until a toothpick inserted into the middle of the flan
    comes out clean. 
  • Remove the double boiler from the utility rack. Run a knife around the edges of
    the flan and turn onto a large plate. If the top of the flan seems to have excessive
    moisture on it, blot off with a paper towels.
